Description
A moist and tropical cake combining the sweetness of white chocolate with tangy crushed pineapple.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 cup crushed pineapple, drained
1/2 cup white chocolate chips, melted
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk
1 tsp vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
Step 2: Cream the softened butter and granulated sugar in a large bowl until light and fluffy.
Step 3: Beat in the eggs one at a time, then stir in the vanilla and melted white chocolate.
Step 4: In a separate bowl, whisk the dry ingredients together: flour, baking powder, baking soda, and salt.
Step 5: Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
Step 6: Gently fold in the drained crushed pineapple.
Step 7: Pour the batter into the prepared pan and bake for 30-35 minutes or until a tester comes out clean.
Step 8: Cool completely on a wire rack before serving or frosting.
Notes
Ensure the pineapple is well-drained to avoid a gummy texture. Use high-quality white chocolate for the best flavor.
