Description

A vibrant and refreshing non-alcoholic mojito featuring the festive flavors of pomegranate and zesty lime, brightened with fresh mint and sparkling water, perfect for any winter gathering.


Ingredients

2 cups 100% pomegranate juice
½ cup fresh lime juice (from 4-5 limes)
3-4 tablespoons simple syrup (adjust to taste)
16-20 fresh mint leaves
1 cup soda water or sparkling water, chilled
Ice cubes
Pomegranate seeds, for garnish
Lime slices or wedges, for garnish
Extra mint sprigs, for garnish


Instructions

Step 1: In a pitcher or large mixing glass, add the fresh mint leaves. Gently muddle the mint with a muddler or the back of a spoon to release its aromatic oils. Be careful not to over-muddle, which can make the mint bitter.
Step 2: Add the pomegranate juice, fresh lime juice, and simple syrup to the pitcher. Stir well to combine all the ingredients and dissolve the simple syrup.
Step 3: Fill four serving glasses with ice cubes. Divide the pomegranate-lime-mint mixture evenly among the glasses.
Step 4: Top each glass with approximately ¼ cup of chilled soda water or sparkling water. Stir gently to incorporate.
Step 5: Garnish each Winter Pomegranate Mojito Mocktail with a few fresh pomegranate seeds, a slice of lime, and a sprig of fresh mint. Serve immediately and enjoy the festive cheer!

Notes

For an extra festive touch, rim your glasses with sugar before pouring. To make simple syrup: combine equal parts sugar and hot water, stir until dissolved, then cool completely. Store leftover simple syrup in the fridge for up to a month.
