Ingredients
3 large eggs, separated
3 oz cream cheese, softened
1/4 tsp cream of tartar (or 1/2 tsp lemon juice/white vinegar)
Pinch of salt
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: In a large bowl, separate your egg whites and yolks. Ensure no yolk gets into the whites.
Step 3: In a separate bowl, combine the egg yolks, softened cream cheese, and a pinch of salt. Mix well until smooth and lump-free.
Step 4: In the bowl with the egg whites, add the cream of tartar. Beat the egg whites with an electric mixer on high speed until stiff peaks form. This is crucial for the bread's texture.
Step 5: Gently fold the egg yolk mixture into the stiff egg whites. Be careful not to deflate the whites too much. The mixture should still be airy.
Step 6: Spoon the mixture onto the prepared baking sheet, forming 8-10 small, round "buns" or a larger loaf shape.
Step 7: Bake for 20-25 minutes, or until golden brown and firm to the touch. Let cool completely on a wire rack before serving.
Notes
For a slightly savory bread, add garlic powder or dried herbs to the yolk mixture. For a sweeter version, add a touch of erythritol and vanilla extract.
