Description
The ultimate healthy and crispy lemon chicken bites cooked to perfection in the air fryer in under 20 minutes.
Ingredients
1.5 lbs boneless skinless chicken breasts, cubed
2 large lemons, zested and juiced
1/2 cup cornstarch
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp sea salt
1/2 tsp black pepper
Avocado oil spray
Instructions
Step 1: Pat the cubed chicken completely dry with a paper towel to remove surface moisture.
Step 2: In a large bowl, mix the lemon juice, lemon zest, garlic powder, onion powder, salt, and pepper.
Step 3: Toss the chicken in the lemon mixture and allow it to marinate for 15 minutes.
Step 4: Drain any excess marinade and toss the chicken in cornstarch until fully coated.
Step 5: Pre-heat the air fryer to 400°F and spray the basket with a light layer of oil.
Step 6: Place chicken in the basket in a single layer and spray the tops of the chicken lightly with oil.
Step 7: Cook for 10-12 minutes, shaking the basket halfway through until golden and crispy.
Notes
Ensure chicken pieces are of uniform size for even cooking. Do not skip the drying step!
