- 3 cups thawed, well-drained frozen hash browns
- 2 tablespoons melted butter
- Salt and pepper, to taste
- 1 tablespoon olive oil
- ½ diced onion
- 1½ cups shredded zucchini, excess moisture squeezed out
- 6 large eggs
- ½ cup milk or half-and-half
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
- 4–5 slices cooked turkey bacon, chopped
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C). Grease a 9-inch pie dish thoroughly.
- In a large bowl, combine hash browns, melted butter, salt, and pepper. Press firmly into bottom and sides of prepared dish to form crust.
- Bake crust for 20–25 minutes until golden and set. Let cool slightly.
- Heat olive oil in skillet over medium heat. Sauté diced onion until translucent, about 3–4 minutes.
- Add shredded zucchini; cook 2–3 minutes until softened. Season with salt and pepper. Transfer to bowl and cool.
- In a large bowl, whisk eggs, milk, garlic powder, thyme, salt, and pepper until frothy.
- Stir in cooled zucchini mixture, chopped turkey bacon, and shredded cheddar cheese.
- Pour filling into pre-baked crust, smoothing top.
- Reduce oven temperature to 375°F (190°C). Bake quiche for 30–35 minutes until center is set and top lightly golden.
- Let rest 10 minutes before slicing and serving.
Notes
Ensure hash browns are well drained to prevent soggy crust. Press crust firmly and pre-bake for a sturdy shell. Customize with different cheeses or herbs. Quiche can be made ahead and reheated. Freeze individual slices wrapped tightly for up to one month.
