A zesty and creamy no-bake dessert made with Icelandic skyr, lemon juice, and shortbread cookies.
Ingredients
40 shortbread cookies
3 cups plain Icelandic skyr yogurt
½ cup sweetened condensed milk
3 oz fresh lemon juice
Instructions
Step 1: Line an 8-inch square pan with parchment paper.
Step 2: Arrange a layer of shortbread cookies across the bottom of the pan.
Step 3: In a large bowl, whisk together yogurt, sweetened condensed milk, and lemon juice until smooth.
Step 4: Spread a thin layer of filling over the cookies.
Step 5: Add a second layer of shortbread cookies.
Step 6: Pour the remaining filling over the top.
Step 7: Smooth the surface with an offset spatula.
Step 8: Cover and refrigerate overnight until fully set.
Step 9: Lift from the pan using the parchment paper handles.
Step 10: Slice into bars and serve chilled.
Notes
Ensure you use thick Icelandic skyr for the best set. If using Greek yogurt, strain it for at least 1 hour before mixing.
