Description

A vibrant, zesty, and incredibly quick pesto made from seasonal garlic scapes and toasted walnuts.


Ingredients

Scale

1 cup chopped garlic scapes (about 10-12 scapes)
1/2 cup toasted walnuts
1/2 cup freshly grated Parmesan cheese
1/2 cup extra virgin olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon sea salt
1/4 teaspoon black pepper


Instructions

Step 1: Trim the flower bulbs and tough ends off the scapes, then chop the remaining stems into small pieces.
Step 2: Pulse the scapes and walnuts in a food processor until finely chopped but still textured.
Step 3: Add the Parmesan, lemon juice, salt, and pepper and pulse again to combine.
Step 4: Slowly drizzle in the olive oil with the motor running until the pesto is smooth and emulsified.
Step 5: Taste for seasoning and transfer to a jar for serving or storage.

Notes

To make this vegan, swap the Parmesan for nutritional yeast. Toasting the walnuts is essential for a deep, nutty flavor.
