Description

An incredibly easy and flavorful one-basket meal featuring juicy chicken and perfectly crispy potatoes, all made in the air fryer in under 30 minutes. This recipe is perfect for busy weeknights and is highly customizable with your favorite seasonings.


Ingredients

1.5 lbs (680g) boneless, skinless chicken thighs, cut into 1-inch pieces
1.5 lbs (680g) small potatoes (Yukon Gold or red potatoes), cut into 1-inch pieces
1 tbsp olive oil
1 tsp paprika (smoked or sweet)
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
Fresh parsley or chives, chopped (for garnish, optional)


Instructions

Step 1: Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
Step 2: In a large bowl, combine the cut chicken pieces and potato pieces. Drizzle with olive oil and toss to coat evenly.
Step 3: Sprinkle the paprika, garlic powder, onion powder, oregano, thyme, salt, and black pepper over the chicken and potatoes. Toss again until all pieces are thoroughly coated with the seasoning.
Step 4: Arrange the seasoned chicken and potatoes in a single layer in the preheated air fryer basket. Do not overcrowd; cook in batches if necessary to ensure even cooking and crispiness.
Step 5: Air fry for 10 minutes. Open the basket and shake or toss the contents with tongs to redistribute.
Step 6: Continue air frying for another 8-12 minutes, shaking or tossing every 5 minutes, until the chicken is cooked through (internal temperature of 165°F / 74°C) and the potatoes are tender and golden brown and crispy.
Step 7: Remove from the air fryer, transfer to a serving platter, and let rest for a couple of minutes. Garnish with fresh parsley or chives, if desired, and serve immediately.

Notes

For best results, do not overcrowd your air fryer basket. Cook in batches if necessary to ensure even crisping. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer at 375°F (190°C) for 5-7 minutes for best texture.
