Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
2 bell peppers (any color), cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
2 tbsp olive oil
2 tbsp lemon pepper seasoning (ensure it's salt-free or adjust salt accordingly)
1 tbsp fresh lemon juice
1 tsp garlic powder
1/2 tsp onion powder
Salt to taste (if needed)
Fresh parsley, chopped (for garnish)
Wooden or metal skewers (if wooden, soak for 30 minutes)
Instructions
Step 1: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Cut chicken breasts into uniform 1-inch cubes.
Step 2: Cut bell peppers and red onion into roughly 1-inch pieces, similar in size to the chicken.
Step 3: In a large bowl, combine the cubed chicken and chopped vegetables. Drizzle with olive oil, then sprinkle generously with lemon pepper seasoning, garlic powder, onion powder, and fresh lemon juice. Toss everything together until thoroughly coated.
Step 4: Cover the bowl and refrigerate to marinate for at least 20-30 minutes, or up to 4 hours for deeper flavor.
Step 5: Thread the marinated chicken and vegetables onto the prepared skewers, alternating between chicken, bell pepper, and red onion. Do not pack too tightly, leaving a small space between pieces for even cooking.
Step 6: Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
Step 7: Lightly spray the air fryer basket with cooking spray. Place the skewers in a single layer in the air fryer basket, ensuring not to overcrowd it. Cook in batches if necessary. Air fry for 12-15 minutes, flipping the skewers halfway through, until the chicken is cooked through (internal temperature of 165°F / 74°C) and the vegetables are tender-crisp with some charring.
Step 8: Carefully remove the cooked skewers from the air fryer. Garnish with fresh chopped parsley and serve immediately.
