Ingredients
1 large lemon (thin-skinned preferred)
4 large eggs
1 cup granulated sugar
1/2 cup unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
1 unbaked 9-inch pie crust
Instructions
Step 1: Preheat oven to 350°F (175°C).
Step 2: Cut ends off the lemon, slice into chunks, and remove all seeds.
Step 3: Place lemon chunks, eggs, sugar, butter, and vanilla in a blender.
Step 4: Blend on high speed for 60 seconds until perfectly smooth.
Step 5: Pour the mixture into the unbaked pie crust.
Step 6: Bake for 35-45 minutes until the center is nearly set.
Step 7: Cool completely on a wire rack, then chill in the refrigerator for at least 2 hours before serving.
Notes
Ensure all seeds are removed from the lemon chunks to prevent bitterness. Thin-skinned lemons are best for this recipe.
