A creamy, no-bake tropical lime pie inspired by the famous Mountain Dew Baja Blast soda.
Ingredients
1 (9-inch) graham cracker crust
8 oz cream cheese, softened
1/2 cup granulated sugar
1/2 cup Mountain Dew Baja Blast soda
2 tbsp fresh lime juice
1 tbsp lime zest
8 oz whipped topping, thawed
1-2 drops neon blue/green food coloring (optional)
Lime slices and extra whipped topping for garnish
Instructions
Step 1: In a large mixing bowl, use an electric hand mixer to beat the softened cream cheese and sugar until creamy and smooth.
Step 2: Slowly add the soda, lime juice, and lime zest. Mix on low speed until combined.
Step 3: Add food coloring if desired to achieve the signature teal color.
Step 4: Gently fold in the whipped topping with a spatula until no white streaks remain.
Step 5: Pour the mixture into the graham cracker crust and smooth the top.
Step 6: Chill in the refrigerator for at least 6 hours or overnight.
Step 7: Garnish with extra whipped cream and lime slices before serving cold.
