Ingredients
1 (9-inch) graham cracker crust
1 cup Mountain Dew Baja Blast soda, divided
1 box (3 oz) lime-flavored gelatin mix
1 package (8 oz) cream cheese, softened
1 container (8 oz) whipped topping, thawed
1 tablespoon fresh lime juice
1 teaspoon lime zest for garnish
Instructions
Step 1: Heat 1/2 cup of Mountain Dew in a small saucepan over medium heat until it begins to simmer.
Step 2: Whisk in the lime gelatin mix for 2 minutes or until completely dissolved.
Step 3: Remove from heat and stir in the remaining 1/2 cup of cold soda and lime juice; let cool to room temperature.
Step 4: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Step 5: Slowly add the cooled gelatin mixture into the cream cheese while beating on low speed until fully incorporated.
Step 6: Gently fold in the whipped topping with a spatula until the filling is uniform in color.
Step 7: Pour the mixture into the graham cracker crust and smooth the top.
Step 8: Chill in the refrigerator for at least 4 hours before serving.
