A silky-smooth, dessert-inspired chia pudding that tastes just like traditional banana cream pie.
Ingredients
2 ripe bananas
1.5 cups unsweetened almond milk
1/2 cup chia seeds
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Optional: Graham cracker crumbs for topping
Instructions
Step 1: Place the peeled bananas, almond milk, vanilla extract, and sea salt into a high-speed blender.
Step 2: Add the chia seeds to the blender jar.
Step 3: Blend on high for 60-90 seconds until the mixture is completely smooth and no seeds are visible.
Step 4: Pour the mixture into two jars or bowls.
Step 5: Refrigerate for at least 1 hour (or overnight) to allow the pudding to set and thicken.
Step 6: Garnish with fresh banana slices and graham cracker crumbs before serving.
Notes
Ensure bananas are very ripe for the best flavor. For a thicker consistency, use 1 1/4 cups of milk instead of 1 1/2.
