A stunning and delicious 30-minute tropical meal featuring smoky glazed chicken and fresh pineapple served in a hand-carved fruit boat.
Ingredients
2 large fresh pineapples
1.5 lbs boneless skinless chicken breasts, cubed
1 cup high-quality BBQ sauce
2 cups cooked jasmine rice
1 large red bell pepper, diced
1/2 small red onion, diced
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
1 lime, cut into wedges
Instructions
Step 1: Slice pineapples in half lengthwise. Use a knife to carve out the center, leaving a 1/2 inch border to create a bowl. Dice the removed flesh and set aside 1 cup for the chicken mixture.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and sauté until golden brown and cooked through, approximately 7 minutes.
Step 3: Add diced bell peppers and red onion to the skillet. Cook for 3-4 minutes until softened.
Step 4: Stir in the BBQ sauce and 1 cup of diced pineapple chunks. Simmer for 2 minutes until the sauce is thick and glossy.
Step 5: Place 1/2 cup of rice into each pineapple half. Top with the BBQ chicken mixture, garnish with cilantro, and serve with lime wedges.
Notes
Ensure your pineapple is ripe for the best flavor; it should smell sweet at the base and have a slight give when squeezed.
