Description

Crispy tostada shells piled high with smoky, sweet BBQ chicken, fresh lettuce, creamy avocado, and vibrant cilantro. A quick, flavorful, and customizable meal perfect for any night of the week.

2 cups cooked, shredded chicken (rotisserie chicken works great)
1 cup your favorite BBQ sauce
8 corn tostada shells
1 cup shredded iceberg or romaine lettuce
1 large avocado, diced
1/4 cup chopped fresh cilantro
Optional toppings: sour cream, lime wedges, sliced jalapeños, crumbled cotija cheese, red onion, pickled onions


Instructions

Step 1: In a medium saucepan, heat olive oil over medium-low heat. Add the shredded chicken and BBQ sauce. Stir to combine, ensuring the chicken is fully coated.
Step 2: Heat the chicken mixture for 5-7 minutes, stirring occasionally, until it is thoroughly warmed through and bubbling gently.
Step 3: While the chicken heats, prepare your tostada shells. If desired, warm store-bought shells in a dry skillet over medium heat for 30 seconds per side, or in a 300°F (150°C) oven for a few minutes, until slightly crisper.
Step 4: Arrange the warmed tostada shells on individual plates or a large serving platter.
Step 5: Spoon a generous amount of the warm BBQ chicken mixture evenly over each tostada shell.
Step 6: Top each BBQ chicken tostada with a layer of shredded lettuce, followed by diced avocado.
Step 7: Finish with a sprinkle of fresh cilantro and any additional optional toppings like sour cream, a squeeze of lime, or sliced jalapeños.

Notes
