Ingredients
For the Biscuits:
2 cups (240g) all-purpose flour, plus more for dusting
1 tbsp baking powder
1/2 tsp granulated sugar (optional)
1/2 tsp salt
1/2 cup (113g) cold unsalted butter, cut into small cubes
3/4 cup (180ml) cold whole milk, plus 1-2 tbsp more if needed
2 tbsp melted butter, for brushing (optional)
For the Gravy:
1 lb (450g) breakfast pork sausage (mild or hot)
1/4 cup (30g) all-purpose flour
2 1/2 cups (600ml) cold whole milk
1/2 tsp black pepper, or to taste
1/4 tsp salt, or to taste
Instructions
Step 1: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: In a large bowl, whisk together the 2 cups all-purpose flour, baking powder, optional granulated sugar, and 1/2 tsp salt for the biscuits.
Step 3: Add the cold, cubed butter to the dry ingredients. Using a pastry blender, your fingertips, or two knives, cut the butter into the flour until it resembles coarse crumbs with some pea-sized pieces remaining.
Step 4: Gradually pour in the 3/4 cup cold whole milk, stirring gently with a fork until just combined. The dough should be shaggy but come together. Do not overmix.
Step 5: Turn the dough out onto a lightly floured surface. Gently knead 5-6 times, just until it forms a cohesive ball.
Step 6: Pat or roll the dough to about 3/4-inch thickness. Use a 2-inch round biscuit cutter to cut out biscuits. Place biscuits on the prepared baking sheet. Bake for 12-15 minutes, or until golden brown. Brush with melted butter immediately if desired.
Step 7: While biscuits bake, begin the gravy. In a large skillet over medium-high heat, crumble and cook the breakfast sausage until thoroughly browned and no pink remains. Remove sausage with a slotted spoon and set aside, leaving about 1/4 cup of rendered fat in the skillet. If less, add a bit of butter to reach 1/4 cup.
Step 8: Reduce heat to medium. Sprinkle the 1/4 cup flour over the sausage fat. Whisk constantly for 1-2 minutes until a light golden roux forms. Cook for an additional minute, stirring, to cook out raw flour taste.
Step 9: Slowly pour in the 2 1/2 cups cold whole milk, a little at a time, whisking constantly to prevent lumps. Continue whisking until the gravy thickens and smoothes out, about 5-7 minutes.
Step 10: Stir in the black pepper and salt to taste. Add the cooked sausage back into the skillet. Bring the gravy to a gentle simmer, stirring occasionally, until it reaches your desired thickness. Taste and adjust seasonings.
Step 11: Serve immediately by splitting hot biscuits and generously spooning the warm sausage gravy over them.

For the flakiest biscuits, ensure all your dairy ingredients (butter and milk) are very cold. Don't overmix the biscuit dough, as this will lead to tough biscuits. When making the gravy, whisk constantly when adding the flour and milk to prevent lumps. Adjust seasoning to your preference – some prefer more pepper in their gravy!
