Description
A fun DIY version of the classic fruit snack with a chewy shell and a liquid bursting center.
Ingredients
1/2 cup white grape juice (for center)
1/2 cup white grape juice (for shell)
2 tablespoons corn syrup
3 packets unflavored gelatin (approx 21g)
1 teaspoon blue raspberry extract
Blue liquid food coloring
1/4 teaspoon citric acid
Instructions
Step 1: Mix 1/2 cup juice with food coloring and citric acid; freeze into small beads.
Step 2: Bloom 3 packets of gelatin in 1/2 cup juice for 5 minutes.
Step 3: Gently heat gelatin, juice, and corn syrup until clear and liquid.
Step 4: Add flavor extract and color to the warm gelatin.
Step 5: Fill molds halfway with gelatin, drop in a frozen bead, and cover with more gelatin.
Step 6: Let set at room temperature until firm.
Step 7: De-mold and enjoy the liquid burst!
Notes
Work quickly when placing the frozen centers into the warm gelatin to prevent premature melting.
