Ingredients
1 can (16.3 oz) refrigerated flaky layers biscuits
1 cup fresh blueberries
1/4 cup granulated sugar
1 tsp cornstarch
1/2 tsp lemon zest
2 tbsp unsalted butter, melted
1/2 cup powdered sugar
1 tbsp milk
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Step 2: In a small bowl, combine blueberries, granulated sugar, cornstarch, and lemon zest. Stir gently to coat.
Step 3: Flatten each biscuit into a large circle using your palm or a rolling pin.
Step 4: Place 1 tablespoon of the blueberry mixture into the center of each flattened biscuit.
Step 5: Pull the edges of the dough together and pinch firmly to seal the berries inside. Shape into a ball.
Step 6: Place the balls seam-side down on the baking sheet and brush with melted butter.
Step 7: Bake for 12-15 minutes until golden brown. Once cool enough to touch, drizzle with a glaze made from powdered sugar and milk.
Notes
Ensure the berries are dry before mixing with sugar to prevent a soggy dough. For a crunchier top, sprinkle with coarse sanding sugar before baking.
