Description

Tender chicken breasts smothered in a rich, garlicky, herby Boursin cheese sauce, ready in under 30 minutes. The ultimate quick creamy Boursin chicken recipe for a gourmet weeknight meal.


Ingredients

1.5 lbs boneless, skinless chicken breasts (2-3 large), pounded to 1/2-inch thickness
1 tbsp olive oil
1 tbsp unsalted butter
Salt and freshly ground black pepper, to taste
1 small onion, finely minced (optional)
2 cloves garlic, minced
1/2 cup chicken broth (or dry white wine)
5.2 oz (150g) Boursin Garlic & Fine Herbs cheese
1/4 cup heavy cream (optional, for extra richness)
2 cups fresh spinach, packed (optional)
Fresh parsley or chives, chopped, for garnish


Instructions

Step 1: Pat the chicken breasts dry with paper towels. Season generously on both sides with salt and pepper.
Step 2: Heat olive oil and butter in a large skillet over medium-high heat. Once shimmering, add the chicken breasts. Sear for 4-6 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F/74°C). Remove chicken from the skillet and set aside on a plate, tented with foil.
Step 3: Reduce heat to medium. Add minced onion (if using) to the same skillet and sauté for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
Step 4: Pour in the chicken broth (or white wine), scraping the bottom of the pan with a wooden spoon to deglaze and loosen any browned bits. Simmer for 1-2 minutes until slightly reduced.
Step 5: Reduce heat to low. Add the Boursin Garlic & Fine Herbs cheese to the skillet. Stir continuously until the cheese has completely melted into a smooth, creamy sauce. If using, stir in the heavy cream.
Step 6: If using, add the fresh spinach and stir until it has wilted, about 1-2 minutes.
Step 7: Return the cooked chicken breasts to the skillet, nestling them into the creamy Boursin sauce. Spoon some sauce over the chicken. Simmer for another 2-3 minutes to warm through and allow flavors to meld.
Step 8: Garnish with fresh parsley or chives and serve immediately with your favorite sides.

Notes

For an even richer sauce, add a splash of white wine when deglazing the pan. Leftovers store well in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth if the sauce has thickened too much.
