Description

2 cups cooked chicken, shredded or diced
1/2 cup buffalo sauce (e.g., Frank's RedHot Buffalo Wing Sauce)
2 tbsp unsalted butter, melted
1 tbsp apple cider vinegar (optional, for tang)
1 head butter lettuce or romaine lettuce, separated into leaves
1/4 cup ranch dressing or blue cheese dressing, for drizzling
2 celery stalks, thinly sliced, for garnish
1/4 cup crumbled blue cheese, for garnish (optional)
Salt and black pepper to taste


Instructions

Step 1: In a medium bowl, combine the shredded or diced cooked chicken with buffalo sauce, melted butter, and apple cider vinegar (if using). Stir until the chicken is thoroughly coated.
Step 2: Heat a large non-stick skillet or pan over medium heat. Add the buffalo chicken mixture and cook for 5-7 minutes, stirring occasionally, until the chicken is heated through and the sauce has thickened slightly.
Step 3: While the chicken is heating, wash and thoroughly dry your lettuce leaves. Arrange them on a serving platter.
Step 4: Once the buffalo chicken is hot, spoon a generous portion of the mixture into each lettuce cup.
Step 5: Drizzle each buffalo chicken lettuce wrap with ranch or blue cheese dressing. Garnish with sliced celery and crumbled blue cheese, if desired.

Notes

For an extra kick, add a pinch of cayenne pepper to the buffalo sauce mixture. If you don't have cooked chicken, simply cook 1 lb of chicken breast and shred it before proceeding with the recipe. These buffalo chicken lettuce wraps are also great for meal prep!
