Ingredients
2 cups all-purpose flour

1 tbsp baking powder

1.5 cups buttermilk
2 large eggs
4 tbsp melted unsalted butter
4 tbsp salted butter (for serving)
1/2 cup fruit jelly or preserves
Instructions
Step 1: Whisk together the flour, sugar, baking powder, and salt in a large bowl.
Step 2: In a separate bowl, blend the buttermilk, eggs, and melted butter.
Step 3: Combine the wet and dry ingredients, stirring until just moistened (small lumps are okay).
Step 4: Heat a lightly greased griddle over medium heat.
Step 5: Pour 1/4 cup of batter for each pancake onto the griddle.
Step 6: Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side.
Step 7: Serve hot, topped with a generous pat of salted butter and a swirl of jelly.
