Ingredients
2 cups all-purpose flour
1.5 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup dark brown sugar, packed
2 large eggs
1 tsp vanilla extract
3/4 cup cream soda
1/2 cup butterscotch chips (for filling)
1/4 cup heavy cream (for filling)
1/2 cup marshmallow fluff (for frosting)
2 cups powdered sugar
1/2 cup salted butter (for frosting)
Instructions
Step 1: Preheat oven to 350°F and line a cupcake tin with paper liners.
Step 2: Cream the softened butter and dark brown sugar in a stand mixer until light and fluffy.
Step 3: Add eggs one at a time, followed by vanilla extract, mixing thoroughly.
Step 4: Whisk the dry ingredients together and add them to the batter alternately with the cream soda.
Step 5: Fill liners 2/3 full and bake for 18-22 minutes until a toothpick comes out clean.
Step 6: Melt butterscotch chips and heavy cream together to create the ganache filling.
Step 7: Core the cooled cupcakes and spoon the ganache into the centers.
Step 8: Whip the salted butter, marshmallow fluff, and powdered sugar until a stiff frosting forms.
Step 9: Pipe the frosting onto the cupcakes and finish with a caramel drizzle.
Notes
Ensure the cream soda is at room temperature to prevent the batter from curdling.
