Description

2 large eggs, separated
2 cups buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled
Non-stick cooking spray or additional melted butter for waffle iron


Instructions

Step 1: In a large bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Make sure there are no lumps.
Step 2: In a separate medium bowl, whisk the egg yolks. Add the buttermilk and the cooled melted butter to the egg yolks and whisk until well combined.

Step 4: In a clean, separate bowl, using an electric mixer, beat the egg whites until stiff peaks form.

Step 6: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with non-stick spray or a brush of melted butter.
Step 7: Pour or ladle the batter onto the hot waffle iron, filling about two-thirds of the grid. Close the lid and cook until golden brown and crisp, usually 3-5 minutes.

Notes
