Description

12 ounces (about 340g) short pasta (e.g., penne, rotini, farfalle)
1 pint (about 2 cups) cherry or grape tomatoes, halved
8 ounces (about 225g) fresh mozzarella pearls (bocconcini or ciliegine), drained
1/2 cup fresh basil leaves, chiffonaded
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper to taste
1/2 cup balsamic glaze (store-bought or homemade, recipe below)


Instructions

Step 1: Cook the pasta according to package directions until al dente. Drain thoroughly and rinse under cold water until completely cooled. Set aside.
Step 2: While the pasta cools, prepare your ingredients. Halve the cherry or grape tomatoes. Drain the fresh mozzarella pearls. Chiffonade the fresh basil leaves.
Step 3: (Optional, for homemade glaze) To make balsamic glaze, pour 1 cup of good quality balsamic vinegar into a small saucepan. Bring to a gentle simmer over medium-low heat and reduce for 10-20 minutes, stirring occasionally, until it thickens to a syrupy consistency. Let cool completely.
Step 4: In a large mixing bowl, combine the cooled pasta, halved tomatoes, drained mozzarella pearls, and chiffonaded basil.
Step 5: Drizzle the salad with extra virgin olive oil, and season with salt and freshly ground black pepper to taste. Gently toss until all ingredients are well combined and coated.
Step 6: Just before serving, generously drizzle with the balsamic glaze. You can also serve the glaze on the side for individual preference.
