Description

A refreshing and vibrant pasta salad featuring tender pasta, sweet cherry tomatoes, fresh mozzarella balls, aromatic basil, and a luscious homemade balsamic glaze. Perfect for summer gatherings, potlucks, or a light meal.

Ingredients

Scale

12 oz (340g) small pasta (like rotini, fusilli, or orecchiette)
1 pint (about 2 cups) cherry or grape tomatoes, halved
8 oz (226g) fresh mozzarella balls (ciliegine or bocconcini), halved or quartered
1/2 cup fresh basil leaves, roughly chopped or torn
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced (optional)
Salt and freshly ground black pepper to taste
For the Balsamic Glaze:
1 cup (240ml) balsamic vinegar
1 tablespoon brown sugar (optional, for extra sweetness and thickness)

Instructions

Step 1: Cook the Pasta Al Dente. Bring a large pot of generously salted water to a rolling boil. Add your chosen small pasta shape (rotini, fusilli, or orecchiette work wonderfully to catch the glaze and dressing) and cook according to package directions until it's perfectly al dente. This means it should be tender but still have a slight, pleasant bite to it. Drain the pasta thoroughly and rinse it under cold water immediately to stop the cooking process and cool it down. This prevents the pasta from becoming mushy and ensures your caprese pasta salad with balsamic glaze remains refreshing. Set aside to ensure it's completely cool.
Step 2: Prepare the Balsamic Glaze. In a small, heavy-bottomed saucepan, combine 1 cup of good quality balsamic vinegar and the optional tablespoon of brown sugar (if using, for a sweeter, thicker glaze). Bring the mixture to a gentle simmer over medium-low heat. Continue to simmer, stirring occasionally to prevent sticking, for 10-15 minutes, or until the vinegar has reduced by about half and thickens enough to coat the back of a spoon. Remember, it will thicken considerably more as it cools. Remove from heat and let it cool completely to room temperature. This rich, concentrated glaze is truly what elevates your caprese pasta salad with balsamic glaze to gourmet status.
Step 3: Whisk the Dressing. In a large mixing bowl, whisk together the extra virgin olive oil, red wine vinegar, and the minced garlic (if you're using it). Season generously with salt and freshly ground black pepper. Taste and adjust the seasoning as needed; this simple vinaigrette will provide a fantastic, bright base for your caprese pasta salad with balsamic glaze.
Step 4: Assemble the Salad Ingredients. To the large bowl containing the dressing, add the completely cooled pasta. Then, add the vibrant, halved cherry or grape tomatoes and the halved or quartered fresh mozzarella balls. Ensure everything is ready for a gentle toss.
Step 5: Add Fresh Basil and Toss Gently. Add the roughly chopped or torn fresh basil leaves to the bowl. Now, with a light hand, gently toss all the ingredients together until they are evenly combined and thoroughly coated with the dressing. You want to avoid crushing the delicate tomatoes and mozzarella, so a slow, careful mixing motion is key when creating your caprese pasta salad with balsamic glaze.
Step 6: Chill and Allow Flavors to Meld. For the absolute best possible flavor and to allow all those wonderful ingredients to truly get to know each other, cover the bowl tightly and refrigerate the caprese pasta salad with balsamic glaze for at least 30 minutes. An hour or two, or even overnight, is even better, as this allows the flavors to meld beautifully. You can easily store it in fantastic Basics Glass Food Storage containers for chilling and convenient serving!
Step 7: Drizzle and Serve. Just before serving, give the caprese pasta salad with balsamic glaze another gentle toss to redistribute the dressing. Then, generously drizzle the cooled balsamic glaze over the top. Serve immediately and prepare for rave reviews!

Notes

For best flavor, allow the caprese pasta salad to chill for at least 30 minutes before serving, ideally longer, to allow the flavors to truly meld. You can make the balsamic glaze ahead of time and store it in an airtight container in the refrigerator for up to two weeks.
