Ingredients
1 large head cauliflower, cut into bite-sized florets
2 tablespoons olive oil
1 teaspoon chili powder

1/4 teaspoon garlic powder
Salt and black pepper to taste
8 small corn or flour tortillas
1/2 cup sour cream (or plain Greek yogurt)
1/2 cup fresh cilantro, packed, roughly chopped
Juice of 1-2 limes
1 small clove garlic, minced

Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Step 4: While the cauliflower roasts, prepare the cilantro lime crema. In a small food processor or blender, combine sour cream, fresh cilantro, lime juice, minced garlic, and a pinch of salt.
Step 5: Blend until smooth and creamy. Taste and adjust seasonings, adding more lime juice or salt if desired.
Step 6: Warm the tortillas in a dry skillet over medium heat, over a gas flame, or in the microwave until soft and pliable.
Step 7: Assemble the tacos by placing a generous spoonful of roasted cauliflower onto each warm tortilla.
Step 8: Top with desired accompaniments like shredded cabbage, diced red onion, or sliced avocado, and drizzle generously with the cilantro lime crema. Serve immediately.
