An incredibly easy and delicious recipe for cheesy broccoli, featuring tender-crisp broccoli florets enveloped in a rich, creamy sharp cheddar cheese sauce, then baked to bubbly perfection. A perfect side dish that even picky eaters will love!
Ingredients
1.5 lbs fresh broccoli florets (about 2 large heads)
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups whole milk (or half-and-half for extra richness)
2 cups freshly shredded sharp cheddar cheese, divided
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish.
Step 2: Prepare the broccoli by washing and cutting into bite-sized florets. Steam until tender-crisp (about 5-7 minutes). Drain well and set aside.
Step 3: In a medium saucepan, melt the butter over medium heat. Sprinkle in the flour and whisk continuously for 1-2 minutes to form a smooth roux.
Step 4: Gradually whisk in the milk or cream until smooth and thickened. Bring to a gentle simmer, stirring occasionally.
Step 5: Reduce heat to low. Add 1.5 cups of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until cheese is completely melted and the sauce is smooth and creamy.
Step 6: Add the steamed broccoli florets to the cheese sauce. Gently fold until all the broccoli is thoroughly coated.
Step 7: Pour the cheesy broccoli mixture into the prepared baking dish, spreading evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Step 8: Bake for 15-20 minutes, or until bubbly and lightly golden on top. For extra browning, broil for 1-2 minutes (watch carefully!).
Step 9: Remove from oven and let stand for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
For the smoothest sauce, always shred your own cheese from a block instead of using pre-shredded. You can prepare the steamed broccoli ahead of time and store it in the fridge for up to 2 days.
