Ingredients
2 cups cooked chicken, shredded or finely diced
1 cup shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup all-purpose flour (or gluten-free blend)
2 large eggs, beaten
2 tablespoons fresh parsley, chopped
1 clove garlic, finely minced (or 1/2 tsp garlic powder)
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil, for frying
Instructions
Step 1: In a large mixing bowl, combine the shredded or finely diced cooked chicken.
Step 2: Add the shredded cheddar cheese, grated Parmesan cheese, all-purpose flour, beaten eggs, chopped fresh parsley, finely minced garlic, onion powder, salt, and black pepper to the bowl with the chicken.
Step 3: Using your hands or a sturdy spoon, thoroughly mix all the ingredients until everything is well combined and cohesive.
Step 4: Divide the mixture into 12 equal portions. Gently flatten each portion into a patty, about 1/2-inch thick and 2-3 inches in diameter.
Step 5: Heat the olive oil in a large non-stick skillet over medium heat until shimmering.
Step 6: Carefully place the chicken fritters into the hot skillet, making sure not to overcrowd the pan. Cook in batches if necessary.
Step 7: Cook for 4-6 minutes on the first side, or until golden brown and crispy.
Step 8: Flip the fritters carefully and cook for another 4-6 minutes on the second side, or until deeply golden brown and cooked through.
Step 9: Remove the cooked fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Step 10: Serve immediately with your favorite dipping sauce.
