Description

Ingredients

1.5 lbs cooked chicken breast, shredded or finely diced
1/2 cup all-purpose flour
2 large eggs
1/2 cup grated Parmesan cheese
1 cup shredded sharp cheddar cheese
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and freshly ground black pepper to taste
2-3 tablespoons olive oil or vegetable oil for frying
Optional: sour cream, ranch dressing, or a squeeze of lemon for serving


Instructions

Step 1: In a large mixing bowl, combine the shredded or finely diced cooked chicken, all-purpose flour, eggs, Parmesan cheese, cheddar cheese, chopped fresh parsley, minced garlic, onion powder, and paprika.
Step 2: Season generously with salt and freshly ground black pepper. Mix everything thoroughly until well combined. The mixture should be thick enough to form patties.
Step 3: Heat 2-3 tablespoons of olive oil or vegetable oil in a large non-stick skillet over medium heat.
Step 4: Form the chicken mixture into small, flat patties, about 2-3 inches in diameter and 1/2 inch thick. You should get 12-15 fritters.
Step 5: Carefully place the cheesy chicken fritters into the hot skillet, ensuring not to overcrowd the pan. You may need to cook them in batches.
Step 6: Cook for 4-6 minutes per side, or until golden brown and crispy, and the cheese is melted and bubbly.
Step 7: Transfer the cooked cheesy chicken fritters to a plate lined with paper towels to drain any excess oil.
Step 8: Serve immediately with your favorite dipping sauce like sour cream, ranch dressing, or a simple squeeze of fresh lemon juice.

Notes
