Ingredients
2 slices thick-cut bread (sourdough, challah, or good quality white bread)
2 large eggs
1/2 cup shredded sharp cheddar cheese (or cheese of choice)
2 tablespoons unsalted butter
Salt and freshly ground black pepper to taste
For the Coriander-Yogurt Chutney:
1/2 cup fresh coriander (cilantro) leaves, packed
1/4 cup plain Greek yogurt
1/2 - 1 small green chili (like Serrano or Thai, deseeded for less heat)
1 small clove garlic
1/2 inch piece fresh ginger, peeled
1 tablespoon fresh lime juice
Pinch of salt
Instructions
Step 1: Begin by preparing your vibrant Coriander-Yogurt Chutney. In a small blender or food processor, combine the fresh coriander, Greek yogurt, green chili (start with half if you prefer less spice, you can always add more), garlic clove, ginger, a squeeze of fresh lime juice, and a pinch of salt. Blend until smooth and creamy. Taste and adjust seasonings as needed – perhaps a little more lime for zest, or another pinch of salt. Set aside.
Step 2: Prepare your bread slices. Using a cookie cutter or a sharp knife, carefully cut a hole in the center of each slice of bread. The hole should be large enough to hold an egg, typically 2.5-3 inches in diameter. Don't discard the cut-out centers; these will be toasted too!
Step 3: Heat a large non-stick skillet or griddle over medium heat. Add a knob of butter (about 1 tablespoon) and let it melt and coat the pan.
Step 4: Place the bread slices (with the holes) and the cut-out centers into the melted butter in the skillet. Cook for 2-3 minutes per side, or until golden brown and lightly toasted.
Step 5: Once the bread is lightly toasted on one side, flip the slices. Immediately sprinkle a generous amount of shredded cheese around the edges of the hole, allowing it to melt slightly onto the toast.
Step 6: Carefully crack an egg directly into the center of each bread hole. Season the eggs with a pinch of salt and black pepper.
Step 7: Reduce the heat to medium-low. Cover the skillet with a lid (if you don't have a lid that fits, a baking sheet or foil will work). Cook for 3-5 minutes, or until the egg whites are set and the yolk is cooked to your desired consistency (runny, soft, or firm). The cheese should be beautifully melted and gooey.
Step 8: While the eggs are cooking, give your chutney another quick stir.
Step 9: Once cooked, carefully transfer the Cheesy Egg Toast to serving plates. Place the toasted bread cut-out next to it, or even on top, if you like.
Step 10: Dollop a generous amount of the fresh Coriander-Yogurt Chutney over the Cheesy Egg Toast, or serve it on the side for dipping. Garnish with a few extra fresh coriander leaves, if desired.
