Crispy, handheld quesadilla strips filled with a gooey cheese blend, perfect for dipping into salsa or guacamole.
Ingredients
8 large flour tortillas
2 cups shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
2 tablespoons unsalted butter or vegetable oil
1/2 teaspoon garlic powder (optional)
Salt to taste
Instructions
Step 1: Shred the cheeses and mix them together in a medium bowl to ensure even distribution.
Step 2: Heat a large non-stick skillet over medium-high heat and add a small amount of butter or oil.
Step 3: Place one tortilla in the pan and sprinkle 3/4 cup of the cheese blend evenly over it.
Step 4: Top with a second tortilla and press down with a spatula to help it bond.
Step 5: Cook for about 2-3 minutes per side until the tortilla is golden and the cheese is bubbling.
Step 6: Remove from heat, let rest for 1 minute, and then slice into 1.5-inch strips.
Step 7: Serve warm with your favorite dipping sauces.
Notes
For extra flavor, season the inside of the tortillas with a pinch of cumin or smoked paprika before adding the cheese.
