Description
A sophisticated, custard-based ice cream infused with Italian Amaretto liqueur and macerated sweet cherries.
Ingredients
2 cups heavy whipping cream
1 cup whole milk
3/4 cup granulated sugar
5 large egg yolks
1/4 cup Amaretto liqueur
1.5 cups sweet cherries, pitted and halved
2 tsp vanilla extract
1/4 tsp sea salt
Instructions
Step 1: Macerate the cherries in 2 tbsp sugar and 2 tbsp Amaretto for 2 hours.
Step 2: Simmer the cream, milk, and half the sugar in a saucepan.
Step 3: Whisk yolks with remaining sugar and salt until pale.
Step 4: Temper the yolks by slowly adding hot cream while whisking.
Step 5: Return mixture to heat and cook until thickened (175°F).
Step 6: Strain custard and stir in vanilla and remaining Amaretto.
Step 7: Chill the mixture in the refrigerator for at least 6 hours.
Step 8: Churn in an ice cream maker, adding cherries in the final minutes.
Step 9: Freeze in an airtight container until firm.
Notes
Ensure the custard base is completely cold before churning to avoid ice crystals.
