Description
A buttery, melt-in-your-mouth shortbread cookie filled with chopped maraschino cherries and rolled in snowy powdered sugar.
Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar (plus extra for rolling)
1 teaspoon vanilla extract
1/2 cup maraschino cherries, drained, chopped and blotted dry
2 1/4 cups all-purpose flour
1/2 teaspoon salt
3/4 cup finely chopped pecans or walnuts
Instructions
Step 1: Preheat oven to 325°F and line baking sheets with parchment paper.
Step 2: Cream the softened butter and 1/2 cup powdered sugar until fluffy.
Step 3: Mix in the vanilla extract and the finely chopped, dry maraschino cherries.
Step 4: Sift in the flour and salt, mixing until the dough just comes together.
Step 5: Fold in the chopped nuts until evenly distributed.
Step 6: Roll the dough into 1-inch balls and place them on the baking sheet.
Step 7: Bake for 12-15 minutes until set but not browned.
Step 8: While still warm, roll the cookies in powdered sugar.
Step 9: Cool completely and roll in powdered sugar a second time.
Notes
Ensure cherries are extremely dry to maintain the cookie's texture. Use high-quality butter for the best flavor.
