Ingredients
1 cup unsalted butter, softened
1 cup sugar
2 cups all-purpose flour
1 tsp vanilla extract
Pinch of salt
Instructions
Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2: In a large bowl, cream together the softened butter and sugar with an electric mixer until light and fluffy (about 2-3 minutes).
Step 3: Beat in the vanilla extract until well combined.
Step 4: In a separate bowl, whisk together the all-purpose flour and a pinch of salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough.
Step 5: Cover the dough and chill in the refrigerator for at least 30 minutes. This helps prevent the cookies from spreading too much.
Step 6: Once chilled, roll the dough into small, 1-inch balls. Place them about 2 inches apart on the prepared baking sheet. You can gently flatten them slightly with the bottom of a glass or a fork if desired.
Step 7: Bake for 12-15 minutes, or until the edges are lightly golden and the centers are just set. Do not overbake to ensure tenderness.
Step 8: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For an extra touch, sprinkle a little granulated sugar over the cookie dough balls before baking. Don't press them too flat if you want a slightly thicker cookie. These cookies are fantastic for holiday platters or as a comforting everyday treat.
