Ingredients
1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
2 large sweet potatoes, cubed
2 firm apples (Honeycrisp or Gala), sliced into wedges
1 red onion, cut into wedges
3 tablespoons olive oil
2 teaspoons fresh rosemary, chopped
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet with olive oil or parchment paper.
Step 2: Place the cubed sweet potatoes and red onion on the sheet pan. Drizzle with 1.5 tablespoons of olive oil, rosemary, salt, and pepper. Toss to coat and roast for 10 minutes.
Step 3: While the potatoes roast, toss the chicken cubes in a bowl with the remaining olive oil, garlic powder, smoked paprika, salt, and pepper.
Step 4: Remove the pan from the oven and add the seasoned chicken and apple slices. Spread everything into a single, even layer.
Step 5: Roast for an additional 18-22 minutes, or until the chicken is cooked through (165°F) and the sweet potatoes are tender.
Step 6: Garnish with fresh parsley and serve your chicken apple and sweet potato sheet pan dinner immediately.
Notes
Ensure chicken is cut into uniform pieces for even cooking. For extra crispiness, use two sheet pans to avoid overcrowding.
