Ingredients
1 lb rotini or fusilli pasta
2 large chicken breasts, grilled and cubed
2 hearts of romaine lettuce, chopped
1 cup creamy Caesar dressing
1/2 cup shaved parmesan cheese
1 cup garlic and herb croutons
2 tbsp olive oil
Salt and pepper to taste
Instructions
Step 1: Cook the pasta in a large pot of boiling salted water until al dente, then drain and rinse with cold water.
Step 2: Season chicken with salt and pepper, then sear in a skillet with olive oil until cooked through (165°F internal temperature).
Step 3: Chop the cooked chicken into small cubes and the romaine into bite-sized pieces.
Step 4: In a large bowl, combine the pasta, chicken, and romaine lettuce.
Step 5: Add the Caesar dressing and parmesan cheese, tossing until everything is thoroughly coated.
Step 6: Top with croutons just before serving to maintain crunch.
Notes
Rinse pasta in cold water immediately after boiling to prevent sticking and ensure a cool salad base.
