Description

This classic chicken parmesan recipe features perfectly breaded, pan-fried chicken cutlets, smothered in rich marinara sauce and melted mozzarella and Parmesan cheeses. A truly comforting and satisfying Italian-American staple that's easier to make at home than you think!

4 boneless, skinless chicken breasts (about 1.5 lbs total)
1/2 cup all-purpose flour
2 large eggs
2 tablespoons milk (or water)
1 1/2 cups Panko breadcrumbs
1/2 cup freshly grated Parmesan cheese, plus more for topping
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
1/2 cup olive oil, for frying (or more as needed)
3 cups marinara sauce (homemade or high-quality store-bought)
8 oz fresh mozzarella, sliced or shredded
Fresh basil leaves, for garnish


Instructions

Step 1: Pound the chicken breasts: Place chicken breasts between two sheets of plastic wrap. Using a meat mallet or the bottom of a heavy pan, pound the chicken to an even 1/2-inch thickness. Pat dry with paper towels.
Step 2: Set up the breading station: Prepare three shallow dishes. In the first, add the flour. In the second, whisk eggs with milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. In the third, combine Panko breadcrumbs, 1/2 cup Parmesan cheese, oregano, basil, garlic powder, onion powder, red pepper flakes (if using), 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Step 3: Bread the chicken: Dredge each chicken cutlet first in the flour, shaking off any excess. Then dip it into the egg mixture, allowing excess to drip off. Finally, press the chicken firmly into the Panko mixture, ensuring a thick, even coating on both sides.
Step 4: Pan-fry the chicken: Heat 1/2 cup olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, carefully place 2-3 breaded chicken cutlets in the skillet, ensuring not to overcrowd the pan. Cook for 3-4 minutes per side, until golden brown and crispy. The internal temperature should be around 160°F (71°C). Remove and place on a clean plate or wire rack. Repeat with remaining chicken, adding more oil if needed.
Step 5: Assemble the chicken Parm: Preheat your oven to 400°F (200°C). If using the same oven-safe skillet, remove excess oil, leaving about a tablespoon. Add a ladleful of marinara sauce to the bottom of the skillet. Place the pan-fried chicken cutlets on top of the sauce. Spoon more marinara sauce generously over each cutlet, then top with slices of fresh mozzarella and a sprinkle of grated Parmesan cheese.
Step 6: Bake to perfection: Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden, and the chicken has reached an internal temperature of 165°F (74°C).
Step 7: Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves. Serve immediately with your favorite pasta or a fresh salad.

Notes

For extra flavor, let the chicken marinate in buttermilk for 30 minutes before breading. Leftovers store well in an airtight container for up to 3 days. Reheat gently in the oven for best results to maintain crispness. If you don't have an oven-safe skillet, transfer the fried chicken to a baking dish before adding sauce and cheese, then bake.
