Description

Transform humble ramen noodles and cooked chicken into a flavor-packed stir fry in under 30 minutes! This customizable chicken ramen stir fry is your new go-to for busy weeknights.


Ingredients

2 packages instant ramen noodles (discard seasoning packets)
1 tbsp vegetable oil
2 cloves garlic, minced
1 tsp grated fresh ginger
1 red bell pepper, thinly sliced
1 cup broccoli florets
1/2 cup shredded carrots
2 cups cooked chicken, shredded or diced
For the Sauce:
1/4 cup low-sodium soy sauce
2 tbsp honey or brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp Sriracha (optional, for heat)
1 tbsp cornstarch
For Garnish:
2 green onions, chopped
1 tsp sesame seeds


Instructions

Step 1: Prepare Your Noodles. Bring a medium pot of water to a boil. Add the ramen noodles (without the seasoning packets) and cook according to package directions until just tender, about 2-3 minutes. Drain well and rinse with cold water to prevent sticking. Set aside.
Step 2: Whisk the Sauce. In a small bowl, combine the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, Sriracha (if using), and cornstarch. Whisk until smooth and the cornstarch is fully dissolved.
Step 3: Sauté Aromatics. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
Step 4: Cook the Vegetables. Add the sliced bell peppers, shredded carrots, and broccoli florets to the skillet. Stir-fry for 3-5 minutes, until the vegetables are tender-crisp.
Step 5: Combine & Heat Chicken. Add the cooked, shredded or diced chicken to the skillet with the vegetables. Stir-fry for 1-2 minutes, just long enough to heat the chicken through.
Step 6: Add Noodles & Sauce. Pour the prepared sauce over the chicken and vegetables. Immediately add the drained ramen noodles to the skillet. Toss everything together vigorously for 1-2 minutes, ensuring the noodles, chicken, and vegetables are evenly coated in the rich, glossy sauce.
Step 7: Garnish & Serve. Remove from heat. Garnish with chopped green onions and a sprinkle of sesame seeds. Serve immediately and enjoy your chicken ramen stir fry!

Notes

Feel free to customize the vegetables! Bell peppers, carrots, and broccoli are great, but snap peas, mushrooms, or cabbage also work wonderfully. If you don't have cooked chicken, simply cut raw chicken breast into small pieces and cook it in the pan before adding the aromatics, ensuring it's cooked through before removing it and continuing with the recipe.
