Description

An incredibly delicious, safe-to-eat, and healthy raw cookie dough made with chickpeas. Perfect for a quick snack or dessert!


Ingredients

1 (15-ounce) can chickpeas, rinsed and drained (skins removed for smoother texture, optional)
1/2 cup creamy peanut butter (or almond butter, cashew butter)
1/4 cup maple syrup (or honey, agave nectar)
1 tsp vanilla extract
1/4 tsp salt
1/4 cup chocolate chips (mini or regular)


Instructions

Step 1: Thoroughly rinse and drain the canned chickpeas. For the smoothest consistency, gently pinch each chickpea to remove its thin skin. This step is optional but highly recommended to eliminate any 'beany' texture.
Step 2: In a food processor or high-speed blender, combine the rinsed chickpeas, peanut butter, maple syrup, vanilla extract, and salt. Process until the mixture is completely smooth and creamy. This may take 2-4 minutes, depending on your appliance. Scrape down the sides occasionally to ensure everything is well incorporated.
Step 3: Transfer the smooth Chickpea Cookie Dough mixture to a medium bowl.
Step 4: Fold in the chocolate chips until evenly distributed.
Step 5: For best results, cover the bowl and chill the Chickpea Cookie Dough in the refrigerator for at least 30 minutes. This allows the flavors to meld and the dough to firm up slightly.
Step 6: Serve chilled and enjoy straight from the bowl, or as a dip, or crumbled over ice cream. Store any leftovers in an airtight container in the refrigerator for up to 5-7 days.

Notes

Ensure chickpeas are well rinsed for the best flavor. For a thicker consistency, add a tablespoon of oat flour. For a runnier, more 'dip-like' consistency, add a splash of plant-based milk.
