Description

A creamy, vibrant, and refreshing cold fruit soup perfect for summer appetizers or light desserts.


Ingredients

2 lbs fresh strawberries, hulled and halved
1 cup Greek yogurt or sour cream
3 tbsp honey or maple syrup
1/2 cup white grape juice or dry Riesling
2 tbsp fresh lemon juice
1/4 tsp vanilla extract
Fresh mint leaves for garnish
Small pinch of sea salt


Instructions

Step 1: Wash and hull the strawberries, cutting them into halves for easier blending.
Step 2: Combine strawberries, sweetener, juice, lemon juice, salt, and vanilla in a blender and process until smooth.
Step 3: Strain the mixture through a fine-mesh sieve into a large bowl to remove seeds.
Step 4: Whisk in the Greek yogurt until the soup is smooth and creamy.
Step 5: Chill in the refrigerator for at least 4 hours to allow flavors to develop.
Step 6: Serve in chilled bowls garnished with mint and extra strawberry slices.

Notes

Ensure berries are fully ripe for the best natural sweetness. For a thinner consistency, add more juice.
