A creamy, refreshing, no-cook summer soup made with fresh strawberries and Greek yogurt.
Ingredients
2 lbs fresh strawberries, hulled
2 cups plain Greek yogurt
4 tablespoons honey
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1/4 cup fresh mint leaves
1/8 teaspoon salt
Instructions
Step 1: Hull and slice the fresh strawberries, ensuring they are clean and dry.
Step 2: Add strawberries, yogurt, honey, lemon juice, vanilla, and mint to a blender.
Step 3: Blend on high speed until completely smooth and creamy.
Step 4: Pour the mixture into a bowl and cover with plastic wrap.
Step 5: Chill in the refrigerator for at least 2 hours to allow flavors to develop.
Step 6: Stir gently before serving in chilled bowls.
Step 7: Garnish with extra mint and sliced berries.
Notes
Use the ripest berries possible for the best natural sweetness.
