Description

A smoky, spicy, and creamy homemade chipotle ranch dressing that takes just minutes to make and transforms any meal from ordinary to extraordinary. This versatile condiment is perfect for salads, dips, tacos, and grilled meats.


Ingredients

1/2 cup mayonnaise
1/2 cup sour cream (or plain Greek yogurt)
1/4 cup milk (or buttermilk)
1-2 chipotle peppers in adobo sauce, chopped (plus 1 tsp adobo sauce)
1 tbsp fresh lime juice
1 clove garlic, minced
2 tbsp fresh cilantro, chopped
1 tbsp fresh chives, chopped
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp dried dill
1/4 tsp salt (or to taste)
1/8 tsp black pepper (or to taste)


Instructions

Step 1: In a blender or food processor, combine the mayonnaise, sour cream (or Greek yogurt), and milk. Blend until smooth.
Step 2: Add the chopped chipotle peppers and adobo sauce, fresh lime juice, and minced garlic to the blender. Blend again until fully incorporated.
Step 3: Add the fresh cilantro, chives, onion powder, garlic powder, dried dill, salt, and black pepper to the mixture.
Step 4: Blend until completely smooth and creamy. Taste the dressing and adjust seasonings as needed, adding more lime, salt, or chipotle for desired flavor and heat.
Step 5: Transfer the chipotle ranch dressing to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.

Notes

For a thicker dip consistency, use less milk or substitute some sour cream with extra mayonnaise. For more heat, add an extra chipotle pepper or a pinch of cayenne. Best made a day ahead for flavors to fully develop.
