Ingredients
2 cups (250g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon (optional)
1/2 teaspoon salt
1/2 cup (113g) unsalted butter, melted and cooled
3/4 cup (150g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup (60ml) milk (whole or 2%)
3 very ripe medium bananas, mashed (about 1.5 cups)
1 cup (150g) fresh strawberries, hulled and chopped
1 cup (170g) semi-sweet chocolate chips (plus more for topping, optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a large bowl, mash the ripe bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
Step 3: To the mashed bananas, add the granulated sugar, melted unsalted butter, large eggs, vanilla extract, and milk. Whisk everything together until well combined.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon (if using), and salt. Ensure there are no lumps in the dry ingredients.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing with a spoon or spatula until just combined. Be careful not to overmix the batter; overmixing can lead to a tough loaf. A few streaks of flour are acceptable.
Step 6: Gently fold in the chopped fresh strawberries and chocolate chips until evenly distributed throughout the batter.
Step 7: Pour the batter into your prepared loaf pan. You can sprinkle a few extra chocolate chips or strawberry slices on top for a beautiful presentation.
Step 8: Bake for 55-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. Baking times can vary depending on your oven, so keep an eye on it.
Step 9: Once baked, remove the loaf from the oven and let it cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely.
Step 10: Slice and serve warm or at room temperature. Enjoy!
Notes
For extra flavor, lightly toast nuts before adding them to the batter. If your bread is browning too quickly, tent it loosely with foil for the last 15 minutes of baking.
