Ingredients
2 cups chocolate graham cracker crumbs
1/2 cup unsalted butter, melted
16 oz cream cheese, room temperature
1/2 cup granulated sugar
2 large eggs, room temperature
1/4 cup sour cream
1 tsp vanilla extract
1 cup cherry pie filling or pitted fresh cherries
Instructions
Step 1: Preheat oven to 325°F and line a 9x9 inch pan with parchment paper.
Step 2: Mix cracker crumbs and melted butter, then press into the bottom of the pan.
Step 3: Bake the crust for 10 minutes and let cool.
Step 4: Beat cream cheese and sugar until smooth; add eggs one at a time.
Step 5: Stir in sour cream and vanilla; pour half the batter over the crust.
Step 6: Spoon cherries over the batter, add the rest of the cheesecake mix, and swirl with a knife.
Step 7: Bake for 35-40 minutes until set but slightly jiggly in the center.
Step 8: Cool completely and refrigerate for at least 4 hours before slicing.
