Description
A buttery, crunchy toffee coated in smooth white chocolate and finished with a classic cinnamon sugar dusting.
Ingredients
1 cup salted butter (2 sticks)
1 cup granulated sugar
1/2 teaspoon pure vanilla extract
12 oz high-quality white chocolate melting wafers
3 tablespoons granulated sugar (for coating)
1 tablespoon ground cinnamon
Instructions
Step 1: Line a 9x13 inch baking sheet with parchment paper and whisk together 3 tablespoons of sugar and 1 tablespoon of cinnamon in a small bowl; set aside.
Step 2: In a heavy-bottomed saucepan, melt the butter and 1 cup of sugar over medium heat, stirring constantly with a silicone spatula.
Step 3: Bring the mixture to a boil and continue to cook, stirring occasionally, until a candy thermometer reaches 300°F (Hard Crack stage).
Step 4: Remove from heat, quickly stir in the vanilla, and immediately pour the mixture onto the prepared baking sheet, spreading it into an even rectangle.
Step 5: Let the toffee sit for 3 minutes, then sprinkle the white chocolate wafers over the top. Once melted, spread the chocolate evenly with an offset spatula.
Step 6: Generously coat the wet chocolate with the cinnamon sugar mixture and allow the toffee to set completely for 2 hours before breaking into pieces.
Notes
Ensure you do not over-stir once the temperature passes 250°F to prevent the butter from separating. If using a thermometer, ensure it does not touch the bottom of the pot.
