Description

A simple, vibrant, and refreshing classic Italian salad recipe featuring crisp romaine, fresh vegetables, and a tangy homemade red wine vinaigrette, perfect as a side or light meal.

Ingredients

Scale

1 large head romaine lettuce, washed and chopped
1/2 red onion, very thinly sliced
1/2 English cucumber, thinly sliced
1 cup cherry tomatoes, halved
1/4 cup black olives, pitted and halved (optional)
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
Salt and freshly ground black pepper to taste
2 tablespoons grated Parmesan cheese (optional, for garnish)

Instructions

Step 1: Prepare Your Greens. Thoroughly wash and dry the romaine lettuce. Tearing or chopping it into bite-sized pieces is key. For the best crispness, I always recommend using a salad spinner. If you don't have one, patting the leaves dry with a clean kitchen towel works just as well. Remember, a dry lettuce leaf holds onto dressing much better!
Step 2: Slice Your Vegetables. Thinly slice the red onion and cucumber. Halve the cherry tomatoes. The thinner the onion slices, the less overpowering they’ll be.
Step 3: Whisk the Vinaigrette. In a small bowl, combine extra virgin olive oil, red wine vinegar, dried oregano, garlic powder, salt, and black pepper. Whisk vigorously until emulsified.
Step 4: Assemble the Salad. In a large salad bowl, combine the prepared romaine, red onion, cucumber, and cherry tomatoes. If you have them, add some ripe black olives for an extra layer of flavor.
Step 5: Dress and Toss. Just before serving, pour the vinaigrette over the salad ingredients. Toss gently but thoroughly, ensuring every piece of vegetable is lightly coated. Avoid over-dressing; you want to enhance, not drown, the natural flavors.
Step 6: Garnish and Serve. Sprinkle with grated Parmesan cheese (if using) and a final grind of fresh black pepper. Serve immediately and enjoy the fresh, vibrant flavors of your homemade classic Italian salad recipe.

Notes

For the crispiest lettuce, wash and dry it well in advance, storing it in the refrigerator wrapped in paper towels. If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10-15 minutes before adding to the salad.
