Description

Indulge in the ultimate classic meatloaf recipe – moist, flavorful, and topped with a tangy-sweet ketchup glaze. This family-favorite dish is pure comfort food, perfect for any occasion.

Ingredients

Scale

2 lbs ground beef (80/20 lean-to-fat ratio)
1 cup plain breadcrumbs (or 1 cup crushed saltine crackers)
1/2 cup milk (any kind)
2 large eggs, lightly beaten
1 medium onion, finely minced
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1/4 cup ketchup (for mixture)
1 teaspoon dried parsley
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:
1/2 cup ketchup
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar (or Worcestershire sauce)

Instructions

Step 1: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the breadcrumbs (or crushed crackers) and milk. Let it sit for 5 minutes to allow the breadcrumbs to absorb the liquid.
Step 2: Add the lightly beaten eggs, minced onion, minced garlic, Worcestershire sauce, 1/4 cup ketchup, dried parsley, dried thyme, salt, and black pepper to the breadcrumb mixture. Mix well to combine all ingredients.
Step 3: Add the ground beef to the bowl. Gently mix with your hands until all ingredients are just combined. Be careful not to overmix, as this can lead to a tough meatloaf.
Step 4: Transfer the meat mixture to a baking pan or a baking sheet lined with parchment paper. Shape it into a rectangular loaf, approximately 9x5 inches and about 2-3 inches high. For best results, place it on a wire rack set inside a baking sheet to allow fat to drain.
Step 5: Prepare the glaze by whisking together 1/2 cup ketchup, brown sugar, and apple cider vinegar (or Worcestershire sauce) in a small bowl.
Step 6: Spread about half of the glaze evenly over the top and sides of the meatloaf.
Step 7: Bake in the preheated oven for 45 minutes.
Step 8: After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return it to the oven and continue baking for another 20-30 minutes, or until an internal temperature of 160°F (71°C) is reached with a meat thermometer.
Step 9: Once cooked, remove the meatloaf from the oven. Tent it loosely with aluminum foil and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute, ensuring a moist and tender meatloaf.
Step 10: Slice and serve warm with your favorite side dishes, such as mashed potatoes or roasted vegetables. Enjoy your classic comfort meatloaf recipe!

Notes

For an even richer flavor, sauté the diced onions and minced garlic in a tablespoon of olive oil before adding them to the meat mixture and letting them cool slightly. This step deepens their flavor and softens their texture, ensuring no raw onion crunch. Don't skip the resting time – it's crucial for a tender, juicy meatloaf.
