Description

3 large egg whites, at room temperature
1/4 teaspoon cream of tartar
1 tablespoon granulated sugar or low-carb sweetener (e.g., erythritol), optional for sweet version
Pinch of salt (optional, for savory versions)
1/2 teaspoon vanilla extract (optional, for sweet versions)
1/2 teaspoon garlic powder or dried herbs (optional, for savory versions)


Instructions

Step 1: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: Separate the egg whites from the yolks, ensuring no yolk gets into the whites. Place the egg whites in a very clean, dry mixing bowl. Add the cream of tartar to the egg whites.
Step 3: Using an electric mixer, begin beating the egg whites on medium speed. Once they start to become foamy, gradually add the sweetener (if using). Increase the speed to high and continue beating until stiff, glossy peaks form. The peaks should stand upright when you lift the whisk.
Step 4: Gently fold in any optional flavorings like vanilla extract, garlic powder, or dried herbs. Be careful not to deflate the egg whites.
Step 5: Carefully spoon the mixture onto the prepared baking sheet, forming 6-8 round, cloud-like mounds.
Step 6: Bake for 20-25 minutes, or until the Cloud Bread is golden brown on the edges and firm to the touch. The centers should still feel soft and pillowy.
Step 7: Turn off the oven and leave the Cloud Bread inside with the door ajar for another 10-15 minutes. This slow cooling helps prevent them from deflating.
Step 8: Remove from the oven and let cool completely on a wire rack before serving. Store any leftovers in an airtight container for up to 3 days.

Notes

Ensure your mixing bowl and whisk are perfectly clean and free of any grease, as this can prevent the egg whites from whipping up properly. For savory clouds, omit the sugar and add a pinch of salt and herbs. For sweeter versions, use the sugar and vanilla. Don't open the oven door too early while baking or cooling, as the sudden temperature change can cause deflation.
