Grilled Corn and Avocado Salad with Lime Dressing

Description

A vibrant, smoky, and creamy salad featuring grilled sweet corn, ripe avocado, red onion, cilantro, and a zesty lime dressing, perfect for any cookout or summer gathering.


Ingredients

6 ears fresh sweet corn, husked
2 tbsp olive oil, plus more for brushing corn
1/2 red onion, finely diced
1 red bell pepper, diced
1/2 cup fresh cilantro, chopped
2 ripe avocados, diced
3 tbsp fresh lime juice (from 2-3 limes)
1/2 tsp chili powder (optional)
Salt and black pepper to taste


Instructions

Step 1: Preheat your grill to medium-high heat. Lightly brush the husked corn cobs with olive oil.
Step 2: Place the corn directly on the hot grill grates. Grill for 8-12 minutes, turning every 2-3 minutes, until the kernels are tender and slightly charred on all sides. Remove from grill and let cool slightly.
Step 3: Once the corn is cool enough to handle, carefully slice the kernels off the cobs into a large mixing bowl.
Step 4: Add the finely diced red onion, diced red bell pepper, and chopped fresh cilantro to the bowl with the corn.
Step 5: In a small bowl, whisk together the 2 tablespoons of olive oil, fresh lime juice, chili powder (if using), salt, and black pepper.
Step 6: Add the diced avocados to the large mixing bowl. Pour the prepared dressing over the corn mixture.
Step 7: Gently toss all the ingredients together until everything is well combined and coated with the dressing. Be careful not to mash the avocado.
Step 8: Taste and adjust seasonings as needed. Serve immediately, or chill for at least 30 minutes for the flavors to meld.

Notes

For best results, use fresh, in-season sweet corn. You can prepare the corn and chop vegetables ahead of time, then assemble and dress just before serving to keep the avocado fresh.
