Description

A mouthwatering grilled corn on the cob recipe, infused with fresh garlic, herbs, and a touch of lime for a vibrant summer side dish that's bursting with flavor. This recipe elevates classic corn on the cob with a smoky char and aromatic herb butter.

Ingredients

Scale

4 ears fresh corn on the cob, husked and silk removed
1/4 cup unsalted butter, softened
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
Pinch of red pepper flakes (optional, for a kick)
1 tablespoon fresh lime juice
Salt to taste
1 teaspoon olive oil (for brushing)

Instructions

Step 1: Prepare the Herb Butter. In a small bowl, combine the softened butter, minced garlic, chopped parsley, chopped chives, smoked paprika, black pepper, and red pepper flakes (if using). Mix well until everything is evenly incorporated.
Step 2: Preheat the Grill. Preheat your grill to medium-high heat (about 400°F / 200°C). If using a grill pan, heat it over medium-high heat on your stovetop.
Step 3: Season the Corn. Lightly brush each ear of corn with a thin layer of olive oil (this helps prevent sticking and promotes even charring). Then, generously spread the prepared herb butter all over each ear of corn.
Step 4: Grill the Corn. Place the buttered corn directly on the preheated grill grates. Grill for 12-15 minutes, turning every 3-4 minutes, until the kernels are tender, slightly charred, and deeply golden in spots.
Step 5: Finish and Serve. Once cooked, remove the corn from the grill. Squeeze fresh lime juice over each ear and sprinkle with a little extra salt to taste. Serve immediately and enjoy this delightful take on corn on the cob recipes.

Notes

For best results, use the freshest corn available. Don't overcrowd the grill to ensure even cooking and charring. This herb butter is also fantastic on other grilled vegetables!
